1/4cuppacked light brown sugar
1cuppumpkin puree
1/2cuplow-fat milkat room temperature
2tablespoonscanola oil
1large eggat room temperature
1cupdark chocolate chips
Instructions
Preheat oven to 375 F. Line a muffin pan with paper liners.
In a medium bowl, whisk together both flours, the baking soda, baking powder, cinnamon, salt, and cloves.
In a separate bowl, combine both sugars, the pumpkin, milk, oil and egg. Mix until well blended.
Next, add the dry ingredients and mix until incorporated.
Finally, stir in the chocolate chips.
Fill each muffin tin ¾-full and bake for 25 minutes, or until a toothpick inserted in the center comes out clean. Let muffins cool 5-10 minutes before serving.
